Psyllium is an excellent source of soluble fibre and is a convenient means of getting more dietary fibre into our diet. It is easy to use – simply stir into water, juice and smoothies, or add to breakfast cereals. Other uses include gluten-free baking, where psyllium binds moisture and helps make the bread and other baked goodies less crumbly. As a thickener, it can be used in ice cream and frozen desserts.
